🥘 Cozy Lamb Pasanda – Made Easy!
If you’re in the mood for something rich, comforting, and packed with flavor, this Lamb Pasanda is the perfect dish to try. It’s creamy, mildly spiced, and absolutely melts in your mouth. Here’s how you can make it at home without any fuss!
What You’ll Need:
-
1½ lbs (700g) lamb shoulder, cut into bite-sized cubes
-
2 tbsp vegetable oil
-
1 large onion, finely chopped
-
3 garlic cloves, minced
-
A thumb-sized piece of ginger, grated
-
3 tbsp plain yogurt
-
2 tbsp ground almonds (this adds creaminess!)
-
1 tsp each of turmeric, coriander, and cumin
-
½ tsp cinnamon + ½ tsp cardamom
-
1 cup heavy cream or coconut milk – whichever you prefer
-
1 cup lamb or chicken stock
-
2 tbsp tomato puree
-
2 tsp garam masala
-
Salt & pepper to taste
-
Sliced almonds and fresh cilantro for that final touch 🌿
Let’s Cook!
-
Brown the lamb:
Heat up the oil in a big pot. Toss in the lamb and cook until it’s nicely browned on all sides. Take it out and set it aside for now. -
Build the base:
In the same pot, add the onions and sauté until soft and golden. Then add your garlic and ginger – cook for about a minute, just until it smells amazing. -
Time for spices:
Sprinkle in the turmeric, coriander, cumin, cinnamon, and cardamom. Stir and let it cook for another minute so the spices wake up. -
Make it creamy:
Now mix in the yogurt, ground almonds, and tomato puree. Stir it all together until it becomes a nice, smooth paste. -
Simmer the lamb:
Pop the lamb back into the pot and pour in the stock. Bring it to a simmer, cover it up, and let it cook low and slow for about 45 minutes. Stir every now and then so nothing sticks. -
Final touches:
Stir in the cream (or coconut milk) and garam masala. Let it simmer for 10 more minutes so the sauce thickens a bit. -
Season and serve:
Add salt and pepper to your taste. Then sprinkle on some sliced almonds and fresh cilantro right before serving.
🍛 Serving Tip:
Serve this beauty with fluffy basmati rice or warm naan. You’ll want something to soak up that luscious sauce!
